  • 6 medium-sized apples (Granny Smith, Honeycrisp, or Fuji), peeled, cored, and sliced 1/4-inch thick
  • 1/2 cup granulated sugar (adjust based on apple sweetness)
  • 1 tablespoon cornstarch or arrowroot powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon lemon juice (optional, prevents browning)
  • 1 cup all-purpose flour
  • 1/2 cup packed light brown sugar
  • 1/4 cup granulated sugar
  • 1/2 cup (1 stick) cold vegan butter, cut into small cubes
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 cup old-fashioned rolled oats

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish or 8×8 inch for a thicker crisp.
  2. Prepare the filling: In a large bowl, combine the sliced apples, granulated sugar, cornstarch (or arrowroot), 1 teaspoon cinnamon, 1/4 teaspoon nutmeg, and lemon juice (if using). Toss gently to coat. Pour the apple mixture into the prepared baking dish and spread evenly.
  3. Prepare the topping: In a separate medium bowl, combine 1 cup flour, brown sugar, granulated sugar, 1 teaspoon cinnamon, 1/4 teaspoon nutmeg, and salt. Add the cold vegan butter cubes. Using a pastry blender, your fingers, or a fork, cut the vegan butter into the dry ingredients until the mixture resembles coarse crumbs.
  4. Stir in the old-fashioned rolled oats until well combined.
  5. Sprinkle the topping evenly over the apple filling in the baking dish.
  6. Bake for 35-45 minutes, or until the topping is golden brown and the apples are tender and bubbling around the edges. If the topping browns too quickly, you can loosely tent with foil.
  7. Remove from oven and let stand for 10-15 minutes before serving. Serve warm, plain or with a scoop of vegan vanilla ice cream.
