  • 1 tbsp olive oil
  • 1 lb boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
  • 1 large onion, chopped
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 tsp grated fresh ginger
  • 12 jalapeños, seeded and minced (or serrano peppers for more heat)
  • 8 cups chicken broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1/2 cup dry egg noodles or ramen noodles (without seasoning packet)
  • 1 tbsp soy sauce
  • 1 tsp sriracha or other hot sauce (or to taste)
  • Juice of 1 lime
  • Fresh cilantro, chopped, for garnish
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add chicken pieces and cook until lightly browned on all sides, about 5-7 minutes. Remove chicken and set aside.
  2. Add onion, carrots, and celery to the pot. Cook until softened, about 8-10 minutes. Add minced garlic, ginger, and jalapeños, cook for another 1-2 minutes until fragrant.
  3. Pour in chicken broth and diced tomatoes. Bring the mixture to a boil. Reduce heat, cover, and simmer for 15 minutes to allow flavors to meld.
  4. Return the cooked chicken to the pot. Add dry noodles and cook according to package directions, usually 5-8 minutes, until tender.
  5. Stir in soy sauce, sriracha (or hot sauce), and lime juice. Taste and adjust seasoning with salt and pepper as needed. Add more hot sauce if desired for extra spice.
  6. Ladle into bowls and garnish with fresh cilantro before serving.

Notes

  • For extra heat, use serrano peppers instead of jalapeños, or increase the amount of sriracha.
  • If using ramen noodles, discard the seasoning packet.
