Instructions

  1. In a medium bowl, whisk together flour, baking soda, salt, ginger, cinnamon, cloves, and nutmeg. Set aside.
  2. In a large bowl, cream together softened butter and brown sugar until light and fluffy. Beat in the egg, molasses, and vanilla extract until well combined.
  3. Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms. Divide the dough in half, flatten into discs, wrap in plastic wrap, and refrigerate for at least 2 hours (or overnight).
  4. Preheat oven to 350°F (175°C). Lightly flour a work surface.
  5. Roll out one disc of chilled dough to about 1/4-inch thickness. Use gingerbread man cookie cutters to cut out shapes. Place cookies on ungreased baking sheets. Gather and re-roll scraps.
  6. Bake for 8-10 minutes, or until edges are set. Baking time will vary depending on size and thickness.
  7. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely. Decorate with icing once cool.
