A hearty slow cooker meal featuring tender chicken breasts or thighs cooked with garlic butter, potatoes, carrots, and onions, seasoned with herbs for a flavorful one-pot dinner.

  • 1.52 lbs boneless, skinless chicken breasts or thighs
  • 1.5 lbs small red potatoes, quartered
  • 1 lb baby carrots
  • 1 large yellow onion, roughly chopped
  • 46 cloves garlic, minced
  • 1/2 cup unsalted butter, melted
  • 1/4 cup fresh parsley, chopped
  • 1 tablespoon dried Italian seasoning
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • Salt and freshly ground black pepper to taste
  • Optional: fresh rosemary sprigs for garnish

Instructions

  1. Place the quartered potatoes, baby carrots, and chopped onion into the bottom of your slow cooker.
  2. Season the chicken breasts or thighs generously with salt and pepper. Lay the seasoned chicken over the vegetables in the slow cooker.
  3. In a small bowl, whisk together the melted butter, minced garlic, chopped fresh parsley, Italian seasoning, paprika, and dried thyme.
  4. Pour this aromatic garlic butter mixture evenly over the chicken and vegetables in the slow cooker. Ensure everything is well coated.
  5. Cover the slow cooker and cook on LOW for 6-8 hours, or on HIGH for 3-4 hours, until the chicken is tender and cooked through, and the vegetables are fork-tender.
  6. Once cooked, gently stir to combine the chicken and vegetables with the flavorful juices. Garnish with additional fresh parsley or rosemary, if desired.
  7. Serve hot, directly from the slow cooker, or transfer to a serving platter. This dish is excellent on its own or with a side of crusty bread.
