A simple and delicious side dish of honey-glazed carrots and green beans, roasted to tender perfection with warm spices.

Ingredients

  • 1 lb carrots, peeled and sliced
  • 1 lb green beans, trimmed
  • 2 tbsp olive oil
  • 1/4 cup honey
  • 2 tbsp lemon juice
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • Salt and freshly ground black pepper, to taste
  • 1 tbsp chopped fresh parsley, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the sliced carrots and trimmed green beans.
  3. Add the olive oil, honey, lemon juice, ground cinnamon, ground nutmeg, salt, and pepper to the vegetables. Toss thoroughly until everything is evenly coated.
  4. Spread the seasoned vegetables in a single layer on a baking sheet, ensuring not to overcrowd them for optimal roasting.
  5. Roast for 20-25 minutes, stirring the vegetables halfway through, until they are tender and slightly caramelized.
  6. Transfer the glazed carrots and green beans to a serving dish.
  7. Garnish with fresh chopped parsley before serving.
