1 pound boneless, skinless chicken breast or thighs, cut into bite-sized pieces
2 tablespoons reduced-sodium soy sauce
1 tablespoon apple cider vinegar
1/2 teaspoon granulated sugar
2 tablespoons olive oil, divided
1 medium yellow onion, thinly sliced
2 medium zucchini, trimmed and sliced into half-moons
1 clove garlic, minced (optional)
Optional garnishes: sesame seeds, sliced green onions
Instructions
In a bowl, combine the bite-sized chicken pieces with soy sauce, apple cider vinegar, and sugar. Mix well and let it marinate while you prepare the remaining ingredients.
Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat. Once the oil is shimmering, add the marinated chicken along with any leftover marinade. Sauté for 3-4 minutes, or until the chicken is golden brown and cooked through. Remove the chicken from the skillet and set aside on a plate.
Add the remaining 1 tablespoon of olive oil to the same skillet. Add the thinly sliced onion and cook for 4-5 minutes, stirring occasionally, until it begins to soften and caramelize slightly.
If using, add the minced garlic and cook for another minute until fragrant.
Add the sliced zucchini to the pan. Cook for about 3 minutes, stirring frequently, until the zucchini begins to soften but still retains a slight crispness.
Return the cooked chicken to the skillet with the zucchini and onions. Toss everything together to combine and heat through for about 1 minute.
Remove from heat. Serve immediately, garnished with sesame seeds and sliced green onions, if desired. This stir fry pairs wonderfully with steamed rice or noodles.
