  • 4 boneless pork chops, about 1-inch thick
  • 1 tbsp olive oil
  • 2 large apples (e.g., Honeycrisp, Gala), cored and sliced into 1/2-inch wedges
  • 1/2 large onion, thinly sliced
  • 1/4 cup chicken broth or apple cider
  • 2 tbsp brown sugar
  • 1 tbsp Dijon mustard
  • 1 tsp dried thyme
  • 1/2 tsp cinnamon
  • Salt and freshly ground black pepper to taste

Instructions

  1. Season pork chops generously with salt and pepper.
  2. Heat olive oil in a large oven-safe skillet (cast iron works well) over medium-high heat. Sear pork chops for 3-4 minutes per side until golden brown. Remove pork chops from skillet and set aside.
  3. Reduce heat to medium. Add sliced apples and onion to the skillet. Cook, stirring occasionally, until apples begin to soften and onions are translucent, about 5-7 minutes.
  4. In a small bowl, whisk together chicken broth (or apple cider), brown sugar, Dijon mustard, dried thyme, and cinnamon.
  5. Pour the sauce mixture over the apples and onions in the skillet. Bring to a simmer.
  6. Return the seared pork chops to the skillet, nestling them among the apples and onions.
  7. Cover the skillet (or transfer to a preheated oven at 375°F/190°C) and cook for 10-15 minutes, or until pork chops are cooked through (internal temperature reaches 145°F/63°C) and apples are tender.
  8. Remove from heat and let rest for a few minutes before serving. Serve pork chops with the apple and onion mixture.
