  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup packed light brown sugar
  • 1 cup creamy peanut butter
  • 2 large eggs
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions

  1. Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in peanut butter until well combined. Add eggs one at a time, beating well after each addition.
  4. In a separate bowl, whisk together flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Roll dough into 1-inch balls. Place on prepared baking sheets, about 2 inches apart.
  7. Using a fork, flatten each cookie ball in a crisscross pattern.
  8. Bake for 8-10 minutes, or until the edges are lightly golden.
  9. Let cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.
