A simple and delicious banana bread recipe made in just one bowl, perfect for a quick treat.

  • 1/2 cup (1 stick) unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 ripe medium bananas, mashed (about 1 cup)
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • Optional: 1/2 cup chocolate chips, chopped nuts (walnuts or pecans)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan, or line with parchment paper.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Add the mashed bananas to the bowl and mix until just combined.
  5. In a separate small bowl, whisk together the flour, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix. If using, fold in chocolate chips or nuts.
  7. Pour the batter into the prepared loaf pan and spread evenly.
  8. Bake for 50-65 minutes, or until a wooden skewer or toothpick inserted into the center comes out clean. If the top starts to brown too quickly, you can loosely tent it with foil.
  9. Remove from oven and let cool in the pan for 10 minutes before inverting onto a wire rack to cool completely. Slice and serve.
