A classic recipe for chewy and spiced Molasses Cookies, perfect for the holidays or any time you crave a warm, comforting treat.

  • 2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1/2 cup packed light brown sugar
  • 1 large egg
  • 1/2 cup unsulphured molasses
  • 1/4 cup granulated sugar, for rolling

Instructions

  1. Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, ginger, cinnamon, cloves, baking soda, and salt; set aside.
  3. In a large bowl, cream together softened butter and brown sugar until light and fluffy.
  4. Beat in the egg, then stir in the molasses until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Place 1/4 cup granulated sugar in a small bowl for rolling.
  7. Roll dough into 1-inch balls, then roll each ball in the granulated sugar to coat.
  8. Place cookies on prepared baking sheets, about 2 inches apart.
  9. Bake for 8-10 minutes, or until the edges are set and slightly crisp, but the centers are still soft.
  10. Let cookies cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.

Notes

  • For chewier cookies, slightly underbake them.
  • Ensure your butter is softened but not melted for the best creaming results.
  • Unsulphured molasses provides a richer, less harsh molasses flavor.
