1 tbsp olive oil
1.5 lbs boneless, skinless chicken breasts
Salt and black pepper to taste
1/2 cup sun-dried tomatoes, packed in oil, drained and chopped
1 shallot, minced (or 1/4 cup finely chopped yellow onion)
2 cloves garlic, minced
1 cup chicken broth
1/2 cup heavy cream
1/4 cup grated Parmesan cheese
1 tsp dried Italian seasoning
1/4 tsp red pepper flakes (optional)
Fresh basil or parsley, chopped, for garnish
Instructions
Pat chicken breasts dry and season generously with salt and pepper.
Heat olive oil in a large oven-safe skillet over medium-high heat. Add chicken breasts and sear for 3-5 minutes per side until golden brown. Remove chicken from skillet and set aside.
Reduce heat to medium. Add chopped sun-dried tomatoes and minced shallot (or onion) to the skillet. Cook for 3-4 minutes until softened.
Add minced garlic and cook for 1 minute until fragrant.
Pour in chicken broth, scraping up any browned bits from the bottom of the skillet. Bring to a simmer.
Stir in heavy cream, Parmesan cheese, Italian seasoning, and red pepper flakes (if using). Bring the sauce to a gentle simmer and cook for 2-3 minutes until slightly thickened.
Return the seared chicken breasts to the skillet, nestling them into the sauce. If your skillet is not oven-safe, transfer everything to a baking dish.
Transfer the skillet (or baking dish) to a preheated 375°F (190°C) oven and bake for 10-15 minutes, or until chicken is cooked through (internal temperature 165°F/74°C).
Remove from oven, garnish with fresh basil or parsley, and serve hot. Excellent with pasta or rice.
