Ingredients

  • 1.5 lbs lean ground beef
  • 1/2 cup almond flour (or pork rind crumbs)
  • 1 large egg
  • 1/2 cup finely chopped yellow onion
  • 1/4 cup finely chopped green bell pepper
  • 2 cloves garlic, minced
  • 1/4 cup heavy cream
  • 2 tbsp Worcestershire sauce
  • 1 tbsp dried parsley
  • 1 tsp salt
  • 1/2 tsp black pepper
  • For the Glaze:
  • 1/4 cup sugar-free ketchup
  • 1 tbsp apple cider vinegar
  • 1 tsp Dijon mustard

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a loaf pan or line a baking sheet with parchment paper.
  2. In a large bowl, combine ground beef, almond flour, egg, chopped onion, bell pepper, minced garlic, heavy cream, Worcestershire sauce, dried parsley, salt, and black pepper. Mix gently but thoroughly with your hands until just combined. Avoid overmixing.
  3. Form the mixture into a loaf shape and place it in the prepared loaf pan or on the baking sheet.
  4. In a small bowl, whisk together the sugar-free ketchup, apple cider vinegar, and Dijon mustard for the glaze. Spread the glaze evenly over the top of the meatloaf.
  5. Bake for 50-60 minutes, or until the internal temperature reaches 160°F (71°C).
  6. Remove from oven and let the meatloaf rest for 5-10 minutes before slicing and serving.
