  • 1.5 pounds boneless, skinless chicken breasts, sliced horizontally into 4 thin cutlets
  • Salt to taste
  • Black pepper to taste
  • 1 teaspoon dried Italian seasoning
  • 1 tablespoon minced garlic
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup sun-dried tomatoes (oil-packed), drained and chopped
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup fresh basil, chopped (optional, for garnish)
  • 2 cups fresh spinach

Instructions

  1. Pat chicken breasts dry with paper towels. Season both sides with salt, pepper, and Italian seasoning.
  2. Heat oil in a large oven-safe skillet over medium-high heat. Add chicken and sear for 3-4 minutes per side, until golden brown. Remove chicken from skillet and set aside.
  3. Reduce heat to medium. Add minced garlic to the skillet and cook for 30 seconds until fragrant, being careful not to burn it.
  4. Pour in chicken broth and heavy cream, scraping up any browned bits from the bottom of the skillet. Bring to a gentle simmer.
  5. Stir in chopped sun-dried tomatoes and Parmesan cheese. Cook for 2-3 minutes, stirring, until the sauce thickens slightly.
  6. Return chicken to the skillet. Nestle the chicken into the sauce. If using, stir in fresh spinach and cook until wilted.
  7. Continue to simmer gently for 5-7 minutes, or until chicken is cooked through and the internal temperature reaches 165°F (74°C).
  8. Garnish with fresh basil, if desired, and serve immediately.
