A hearty and flavorful Keto Lasagna Soup that captures all the deliciousness of lasagna without the carbs.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 pound ground beef or Italian sausage
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 (24 ounce) jar low-carb marinara sauce (check labels for sugar content)
  • 4 cups beef broth
  • 1 (8 ounce) package cream cheese, softened
  • 1/2 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese, plus more for topping
  • 1/2 teaspoon dried Italian seasoning
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 cups fresh spinach
  • 1 cup shredded mozzarella cheese
  • Salt and black pepper to taste
  • Optional: fresh basil for garnish

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add ground beef or sausage and chopped onion. Cook, breaking up the meat, until browned. Drain any excess fat.
  2. Add minced garlic and cook for 1 minute more until fragrant.
  3. Stir in the marinara sauce, beef broth, Italian seasoning, and red pepper flakes (if using). Bring the mixture to a simmer.
  4. Reduce heat to low, cover, and let simmer for 15-20 minutes to allow flavors to meld.
  5. While the soup simmers, in a small bowl, whisk together the softened cream cheese, ricotta cheese, and 1/2 cup Parmesan cheese until smooth.
  6. Once the soup has simmered, stir in the fresh spinach until wilted.
  7. Remove the pot from heat. Drop dollops of the cream cheese-ricotta mixture into the hot soup. Do not stir it completely in, allow it to remain in distinct creamy pockets.
  8. Season with salt and black pepper to taste.
  9. Ladle the soup into bowls. Top each serving with shredded mozzarella cheese and an additional sprinkle of Parmesan. Garnish with fresh basil if desired.

Notes

  • Ensure your marinara sauce is low in sugar to keep it keto-friendly.
  • Adjust red pepper flakes according to your spice preference.
  • The cream cheese mixture is meant to be swirled in, not fully incorporated, to create creamy pockets.
