2 lbs boneless, skinless chicken thighs
1/2 cup soy sauce (low sodium preferred)
1/2 cup honey
1/4 cup ketchup
2 tbsp apple cider vinegar
4 cloves garlic, minced
1 tsp fresh ginger, grated (optional)
1 tbsp cornstarch (mixed with 2 tbsp cold water, for thickening)
Sesame seeds and sliced green onions for garnish (optional)
Instructions
Pat chicken thighs dry with paper towels. Place them in the slow cooker.
In a medium bowl, whisk together soy sauce, honey, ketchup, apple cider vinegar, minced garlic, and grated ginger (if using). Pour the sauce over the chicken thighs in the slow cooker.
Cover and cook on low for 3-4 hours or on high for 2-3 hours, or until chicken is cooked through and very tender.
Carefully remove chicken thighs from the slow cooker and set aside.
In a small bowl, whisk together cornstarch and cold water to create a slurry. Pour the slurry into the sauce remaining in the slow cooker.
Whisk the sauce and slurry mixture continuously while cooking on high heat in the slow cooker for about 10-15 minutes, or until the sauce has thickened to your desired consistency.
Return the chicken thighs to the thickened sauce and toss to coat.
Serve hot, garnished with sesame seeds and sliced green onions, if desired. Delicious over rice.
Notes
Low sodium soy sauce is recommended to control salt content.
The optional ginger adds an extra layer of flavor.
The cornstarch slurry is used to thicken the sauce. Adjust the amount for desired consistency.
This dish is excellent served over rice.
