  • 1 tablespoon olive oil
  • 1 cup chopped yellow onion
  • 1 cup chopped celery
  • 1 cup chopped carrots
  • 2 cloves garlic, minced
  • 6 cups chicken broth
  • 2 cups cooked chicken, shredded or diced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • Salt and black pepper to taste
  • 4 ounces egg noodles (medium or wide)
  • 1/4 cup fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot or Dutch oven, heat olive oil over medium heat. Add onion, celery, and carrots. Sauté for 5-7 minutes until vegetables start to soften.
  2. Add minced garlic and cook for another minute until fragrant.
  3. Pour in chicken broth. Add shredded cooked chicken, dried thyme, and dried rosemary. Bring the soup to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes to allow flavors to meld.
  4. Stir in the egg noodles. Cook for 8-10 minutes, or according to package directions, until noodles are tender.
  5. Season with salt and black pepper to taste.
  6. Ladle into bowls and garnish with fresh parsley before serving.
