A classic comfort food, this homemade meatloaf recipe is easy to make and full of flavor. Made with ground beef, a savory glaze, and simple seasonings, it’s perfect for a family dinner.

  • 1.5 lbs ground beef (80/20 lean)
  • 1 large egg, beaten
  • 1/2 cup milk
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped onion
  • 1/4 cup finely chopped green bell pepper (optional)
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • For the Glaze:
  • 1/2 cup ketchup
  • 2 tablespoons brown sugar
  • 1 teaspoon Dijon mustard

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine ground beef, egg, milk, breadcrumbs, chopped onion, green bell pepper (if using), Worcestershire sauce, salt, and pepper. Mix until just combined, do not overmix.
  3. Shape the mixture into a loaf and place it in a 9×5 inch loaf pan or on a baking sheet.
  4. In a small bowl, whisk together ketchup, brown sugar, and Dijon mustard for the glaze. Spread half of the glaze over the top of the meatloaf.
  5. Bake for 45 minutes.
  6. Remove from oven, spread the remaining glaze over the meatloaf.
  7. Return to oven and bake for another 15-20 minutes, or until the internal temperature reaches 160°F (71°C).
  8. Remove from oven and let stand for 10 minutes before slicing and serving.

Notes

  • Do not overmix the meatloaf mixture, as this can result in a tough texture.
  • Using a loaf pan helps the meatloaf retain its shape and collects juices.
  • Letting the meatloaf rest before slicing allows the juices to redistribute, making it more tender and moist.
