Healthy high-protein cheeseburger bowls featuring lean ground beef, fresh vegetables, and a skinny Big Mac dressing for a low-carb, satisfying meal.

Ingredients

  • 1 lb lean ground beef (96% lean)
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and freshly ground black pepper, to taste
  • 4 cups chopped romaine lettuce
  • 1/2 cup thinly sliced red onion
  • 1 cup diced cherry tomatoes
  • 1/2 cup chopped baby dill pickles
  • 1 cup shredded reduced-fat cheddar cheese
  • For the Skinny Big Mac Dressing:
  • 1/2 cup light mayonnaise
  • 1/2 cup plain non-fat Greek yogurt
  • 6 tbsp no-sugar-added ketchup
  • 12 tbsp water (for desired consistency)
  • 3 tbsp minced white onion
  • 2 tsp granulated sugar or preferred sweetener
  • 1 tbsp sweet pickle relish
  • 1 tbsp white vinegar
  • Pinch of salt

Instructions

  1. Prepare your burger dressing first by combining all dressing ingredients in a small bowl or a food processor until smooth. Adjust water for desired consistency. Set aside.
  2. Brown the lean ground beef in a skillet over medium heat. Season the meat with paprika, garlic powder, onion powder, salt, and pepper while cooking. Once cooked through, drain any excess fat.
  3. Assemble the bowls: distribute the chopped romaine lettuce evenly among four serving bowls.
  4. Layer the cooked seasoned ground beef over the lettuce in each bowl.
  5. Evenly scatter the sliced red onion, diced cherry tomatoes, and chopped dill pickles over the beef.
  6. Top each bowl with shredded cheddar cheese.
  7. Generously drizzle the prepared Skinny Big Mac dressing over each cheeseburger bowl. Serve immediately or prepare for meal-prepping.
