A hearty and flavorful Ground Turkey Taco Soup, perfect for a quick and easy weeknight meal. Packed with beans, corn, tomatoes, and seasoned with taco seasoning, this soup is a crowd-pleaser.

  • 1 tablespoon olive oil
  • 1 pound ground turkey
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 (1.25 ounce) packet taco seasoning
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can kidney beans, rinsed and drained
  • 1 (15 ounce) can corn, drained
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 (10 ounce) can Rotel diced tomatoes with green chiles, undrained
  • 4 cups chicken broth
  • Optional toppings: shredded cheddar cheese, sour cream, crushed tortilla chips, sliced avocado, fresh cilantro

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add ground turkey and chopped onion. Cook, breaking up the turkey, until browned and onion is softened. Drain any excess fat.
  2. Add minced garlic and taco seasoning. Cook for 1 minute more, stirring constantly, until fragrant.
  3. Stir in the rinsed black beans, kidney beans, drained corn, diced tomatoes (undrained), Rotel tomatoes (undrained), and chicken broth.
  4. Bring the soup to a boil, then reduce heat to low, cover, and simmer for at least 20-30 minutes to allow the flavors to meld. The longer it simmers, the better it tastes!
  5. Taste and adjust seasoning if necessary.
  6. Ladle hot soup into bowls and serve with your favorite toppings.

Notes

  • The longer the soup simmers, the more the flavors will meld and the better it will taste.
  • Feel free to adjust the spice level by using mild or hot Rotel tomatoes.
  • This soup can be made ahead of time and reheats well.
