  • For the Meatballs:
  • 1 lb ground chicken (or a blend of lamb/beef)
  • 1/3 cup panko breadcrumbs
  • 1/3 cup milk (for panko absorption)
  • 1/2 medium red onion, finely chopped
  • 2 cloves garlic, finely chopped or grated
  • 3 tablespoons fresh mint, finely chopped (or dill/parsley)
  • 1 large egg
  • Zest of 1 small lemon
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil (for cooking)
  • For the Tzatziki:
  • 1 cup plain Greek yogurt (full-fat or 2%)
  • 1/2 cucumber, grated and squeezed dry
  • 2 cloves garlic, minced
  • Juice of 1/2 lemon
  • 1 tablespoon olive oil
  • 1 tablespoon chopped fresh dill (or mint)
  • Salt and pepper to taste
  • For the Bowls:
  • 2 cups cooked basmati or jasmine rice (or quinoa)
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, diced or sliced
  • Crumbled feta cheese
  • Fresh parsley or dill, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Prepare the tzatziki: In a bowl, combine Greek yogurt, grated and dried cucumber, minced garlic, lemon juice, olive oil, fresh dill, salt, and pepper. Mix well and refrigerate to allow flavors to meld.
  3. For the meatballs: In a small bowl, combine panko breadcrumbs with milk and let sit for about 10 minutes until absorbed.
  4. In a large bowl, combine the ground chicken, soaked panko, chopped red onion, minced garlic, fresh mint, egg, lemon zest, oregano, cumin, coriander, salt, and pepper. Mix gently but thoroughly, being careful not to overmix.
  5. Form the mixture into approximately 1-inch meatballs and place them evenly on the prepared baking sheet. Drizzle lightly with olive oil.
  6. Bake for 12-15 minutes, or until the meatballs are golden brown and cooked through (internal temperature 165°F).
  7. To assemble the bowls: Divide the cooked rice among serving bowls. Arrange the baked meatballs, halved cherry tomatoes, sliced cucumber, and crumbled feta cheese over the rice.
  8. Top each bowl generously with a dollop of the chilled tzatziki sauce and garnish with fresh parsley or dill before serving.
