A rich and flavorful dip made from deeply caramelized onions, cream cheese, mayonnaise, and sour cream.

  • 2 1/2 cups diced onions (brown, yellow, or white, about 23 medium onions)
  • 3/4 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper (optional, for a hint of warmth)
  • 4 oz (120g) cream cheese, cold and cubed
  • 1/4 cup whole egg mayonnaise
  • 1/2 cup sour cream (full fat recommended)

Instructions

  1. Melt the butter in a spacious skillet over medium heat.
  2. Add the diced onions to the skillet, along with 3/4 teaspoon of salt, 1/2 teaspoon of black pepper, 1/2 teaspoon of onion powder, and the optional 1/4 teaspoon of cayenne pepper. Stir thoroughly to combine.
  3. Cook the onions for 5 minutes, stirring intermittently. Then, reduce the heat to medium-low and continue to cook for 20-25 minutes, stirring occasionally, until the onions are deeply caramelized, sweet, and a rich golden-brown.
  4. Remove the skillet from the heat and allow the caramelized onions to cool completely.
  5. In a separate mixing bowl, combine the cold, cubed cream cheese, mayonnaise, and sour cream. Mix until the mixture is entirely smooth. If the cream cheese is particularly firm, a few 10-second bursts in the microwave can help soften it for easier blending.
  6. Once the caramelized onions are cool, gently fold them into the cream cheese mixture until just incorporated.
  7. Refrigerate the dip for a minimum of 2 hours to allow the flavors to fully meld and intensify. For optimal taste, chilling overnight is recommended.
  8. Serve chilled with your favorite potato chips, pita bread, or a selection of crisp crudités.
