  • 3 tablespoons unsalted butter
  • 3 tablespoons all-purpose flour
  • 6 oz pineapple juice (one small can)
  • 1/3 cup light brown sugar
  • 1/4 cup soy sauce
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1.5 cups chopped fresh pineapple
  • 1.5 cups sliced red bell pepper
  • Chopped green onions, for garnish
  • Cooked rice, for serving

Instructions

  1. Begin by creating a quick roux: in a microwave-safe bowl, melt the butter, then whisk in the flour until smooth. Microwave for about 30 seconds until slightly thickened.
  2. Into this roux, gradually whisk in the pineapple juice, brown sugar, soy sauce, garlic powder, salt, and pepper until well combined.
  3. Place the chicken breasts into the slow cooker insert. Pour the prepared Hawaiian sauce over the chicken.
  4. Cover the slow cooker and cook on the low setting for 6 to 8 hours, or on high for 3 to 4 hours, until the chicken is tender and easily shredded.
  5. During the final hour of cooking, stir in the chopped fresh pineapple and sliced red bell pepper.
  6. Once cooking is complete, shred the chicken directly in the sauce. Serve this flavorful Hawaiian chicken over warm cooked rice, garnished with fresh chopped green onions.
