A comforting easy sloppy joe casserole featuring a flavorful ground beef mixture topped with creamy mashed potatoes and melted cheese.

  • For the Mashed Potatoes:
  • 45 large russet potatoes, peeled and cubed
  • 4 tbsp butter
  • 1/2 cup milk (whole or preferred)
  • 1/2 cup sour cream (optional)
  • Salt and freshly ground black pepper, to taste
  • For the Sloppy Joe Layer:
  • 1 lb ground beef or ground turkey
  • 1/2 cup finely diced yellow onion
  • 1/2 cup diced green bell pepper
  • 2 cloves garlic, minced
  • 1 cup ketchup
  • 2 tbsp brown sugar
  • 1 tbsp Worcestershire sauce
  • 1 tbsp yellow mustard
  • 1/2 tsp smoked paprika
  • 1/2 tsp chili powder (optional, for heat)
  • Salt and freshly ground black pepper, to taste
  • For the Cheese Topping:
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella (optional)
  • Fresh parsley or green onions, chopped, for garnish

Instructions

  1. Prepare the mashed potatoes: Boil the peeled and cubed russet potatoes in salted water until they are fork-tender (approximately 12-15 minutes). Drain well.
  2. Return the drained potatoes to the pot. Mash them with butter, milk, and optional sour cream until smooth. Season with salt and pepper to your preference. Set aside.
  3. While the potatoes cook, prepare the sloppy joe filling: In a large skillet over medium heat, cook the ground beef until it is fully browned. Drain any excess grease.
  4. Add the diced onion, minced garlic, and diced green bell pepper to the skillet with the beef. Sauté for 3-4 minutes until the vegetables have softened.
  5. Stir in the ketchup, brown sugar, Worcestershire sauce, yellow mustard, smoked paprika, and optional chili powder. Season with salt and pepper.
  6. Simmer the sloppy joe mixture for 5 minutes, allowing it to thicken.
  7. Preheat your oven to 375°F (190°C). Grease a 9×13 inch baking dish.
  8. Spread the sloppy joe mixture evenly into the prepared baking dish.
  9. Carefully spoon the mashed potatoes over the sloppy joe layer, smoothing the top.
  10. Sprinkle the shredded cheddar cheese (and mozzarella, if using) generously over the mashed potatoes.
  11. Bake uncovered for 25-30 minutes, or until the cheese is melted and lightly golden brown. For an extra golden finish, you can broil for 1-2 minutes at the very end, watching carefully.
  12. Garnish with fresh chopped parsley or green onions before serving hot.
