1 cup diced cherry tomatoes
1 cup cottage cheese
1 cup shredded mozzarella cheese
2 large eggs
1 cup fresh spinach, roughly chopped
1 cup diced bell peppers (any color)
1 tsp dried oregano
1 tsp garlic powder
Salt and freshly ground black pepper, to taste
Olive oil or cooking spray, for greasing the dish
Fresh basil, chopped, for garnish (optional)
Instructions
Preheat your oven to 375°F (190°C).
In a large mixing bowl, combine the diced cherry tomatoes, cottage cheese, and shredded mozzarella cheese.
Crack the eggs into the bowl and whisk the entire mixture until it’s smooth and well combined.
In a separate bowl, toss together the chopped spinach and diced bell peppers. Season this vegetable mix with dried oregano, garlic powder, salt, and pepper.
Gently fold the seasoned vegetable mixture into the cheese and egg base.
Lightly grease a 9-inch pie dish with olive oil or cooking spray.
Pour the entire pizza pie mixture into the prepared dish, spreading it evenly with a spatula.
Bake in the preheated oven for 30 to 35 minutes, or until the pie is golden brown, bubbly, and a toothpick inserted into the center comes out clean.
Let the crustless pizza pie cool for about 10 minutes before slicing and serving. Garnish with fresh basil, if desired.
