Easy make-ahead freezer breakfast burritos filled with scrambled eggs, diced ham, sautéed vegetables, and cheese, perfect for quick breakfasts.

Ingredients

  • 1 tbsp butter, divided
  • 1/2 medium yellow onion, diced
  • 1 bell pepper (any color), diced
  • Pinch of salt and black pepper
  • 8 oz ham, diced (or breakfast sausage/bacon)
  • 12 large eggs
  • 1/4 cup milk
  • 8 large (10-inch) flour tortillas
  • 2 cups shredded cheddar cheese (or preferred cheese)
  • Optional additions: salsa, hot sauce, avocado, green onions, jalapeños, beans, spinach, tater tots

Instructions

  1. Begin by dicing the onion and bell pepper. Heat half of the butter in a large skillet over medium heat. Sauté the diced onion and bell pepper for about 5 minutes until the onion becomes soft and translucent. Season with a pinch of salt and pepper, then transfer to a bowl and set aside.
  2. Dice the ham (or prepare your choice of breakfast meat). Add the remaining half of the butter to the skillet and sauté the ham over medium heat for about 5 minutes until lightly browned. Transfer the ham to a separate bowl.
  3. In the same skillet, melt a little more butter over medium heat. Whisk the 12 eggs with the milk and a pinch of salt and pepper. Pour the egg mixture into the hot skillet. Cook the eggs, gently pushing them from the edges to the center as they set, until most of the egg is cooked but still moist. Avoid overcooking to prevent dryness.
  4. To assemble the burritos, lay out each tortilla. Spoon a portion of the scrambled eggs onto the center of each, followed by the sautéed bell pepper and onion mixture, a handful of shredded cheese, and the cooked ham.
  5. Fold the sides of the tortilla inward, then fold the bottom edge up and over the filling, pulling it snugly to create a tight roll. Repeat for all burritos.
  6. For freezing, wrap each assembled burrito individually in plastic wrap, then an additional layer of aluminum foil or parchment paper. Place them in a freezer-safe bag or container, label with the date, and freeze for up to 2-3 months.
  7. To reheat from frozen: Remove the wrapping. You can microwave the burrito for 2-3 minutes, flipping halfway through, or warm in an oven preheated to 350°F (175°C) for 20-30 minutes, or until heated through. Alternatively, thaw in the refrigerator overnight and then reheat.

Notes

  • Optional additions like salsa, hot sauce, avocado, green onions, jalapeños, beans, spinach, or tater tots can be added to the burritos for extra flavor.
  • Burritos can be frozen for up to 2-3 months.
  • Reheat options include microwave (2-3 minutes, flipping halfway), oven (350°F for 20-30 minutes), or thaw overnight and reheat.
