Ingredients
Scale
2 lbs lean ground beef (90/10 or 93/7)
½ tbsp olive oil
1 tsp salt
1 tsp black pepper
1 tsp garlic powder
½ large yellow onion, finely diced
¼ cup mayonnaise
24 dinner rolls (e.g., King’s Hawaiian, 2 packs of 12)
8 slices medium cheddar cheese
6 oz shredded medium cheddar cheese (or more sliced cheese)
2 tbsp unsalted butter, melted (plus more to grease baking sheet)
1 tbsp sesame seeds
Optional: Ketchup, mustard, sweet pickle relish
Instructions
Brown the Beef and Onions: Preheat your oven to 350°F (175°C). In a large skillet over medium-high heat, add olive oil and sauté the finely diced yellow onion until softened. Add the ground beef, breaking it apart with a spatula. Season with salt, black pepper, and garlic powder. Cook until the beef is browned and cooked through, then remove from heat. Tilt the skillet to drain any excess fat. Stir about ¼ cup of mayonnaise into the cooked beef mixture.
Prepare the Rolls: Carefully slice the entire slab of dinner rolls in half horizontally, keeping the rolls connected. Butter the bottom of a rimmed baking sheet, then place the bottom halves of the rolls on it.
Assemble the Sliders: Lay slices of cheddar cheese over the bottom buns. Evenly spread the seasoned ground beef mixture over the cheese layer, squaring off the edges. Top the beef with shredded cheddar cheese. Place the top halves of the buns, cut-side down, over the cheese and beef layers.
Butter and Bake: Brush the tops of the assembled sliders with melted butter and immediately sprinkle with sesame seeds. Bake for 12-15 minutes, or until the cheese is melted and bubbly, and the tops of the rolls are lightly golden brown.
Serve: Allow to cool slightly before slicing into individual sliders. Serve warm, with optional condiments like ketchup, mustard, or a custom burger sauce.
Notes
Optional condiments like ketchup, mustard, or sweet pickle relish can be served on the side.
Use lean ground beef to reduce fat content.
King’s Hawaiian rolls are recommended for their sweetness, but any soft dinner rolls work.
