A fresh and flavorful salad topped with grilled BBQ chicken skewers, bell peppers, mixed greens, cherry tomatoes, corn, black beans, and cheddar cheese, drizzled with ranch dressing.

Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 2 bell peppers (any color), cut into 1-inch pieces
  • 2 tablespoons olive oil
  • Salt to taste
  • Black pepper to taste
  • 1/2 cup BBQ sauce, plus extra for drizzling
  • Wooden or metal skewers (if using wooden, soak them for 30 minutes prior)
  • 68 cups mixed greens or chopped romaine lettuce
  • 1 cup cherry tomatoes, halved
  • 1 cup corn (fresh, frozen, or canned and drained)
  • 1 (15-ounce) can black beans, rinsed and drained
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup ranch dressing

Instructions

  1. Toss the chicken cubes with olive oil, salt, and black pepper until evenly coated.
  2. Thread the seasoned chicken pieces alternately with the bell pepper pieces onto your skewers.
  3. Preheat your grill or grill pan to medium-high heat. Grill the skewers for 10-12 minutes, turning them regularly to ensure even cooking and charring.
  4. During the last few minutes of grilling, generously brush the skewers with BBQ sauce.
  5. While the skewers are grilling, prepare the salad base. In a large bowl, layer the mixed greens, halved cherry tomatoes, corn, black beans, and shredded cheddar cheese.
  6. Once the chicken skewers are cooked, arrange them on top of the prepared salad.
  7. Drizzle the entire salad with ranch dressing and an extra touch of BBQ sauce before serving.

Notes

  • If using wooden skewers, soak them for 30 minutes prior to grilling to prevent burning.
