Easy Baked Egg Boats Recipe – A fun and delicious breakfast dish featuring eggs baked inside a hollowed-out loaf of bread, topped with cheese, bacon, and garnished with chives.

  • 1 loaf Italian or French bread (about 1214 inches long)
  • 6 large eggs
  • 2 tbsp milk or heavy cream
  • Salt and freshly ground black pepper, to taste
  • ½ cup shredded cheddar cheese (or preferred cheese)
  • ¼ cup cooked crumbled bacon (or diced ham/sausage)
  • 2 tbsp chopped fresh chives or green onions, for garnish

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper for easy cleanup.
  2. Prepare the Bread: Using a serrated knife, carefully cut a ‘V’ shape lengthwise down the center of the bread loaf, creating a trough. Remove the excess bread from the center, leaving about a ½-inch border on all sides. You can save the removed bread for croutons or breadcrumbs.
  3. Crack Eggs into Trough: Gently crack each egg directly into the hollowed-out bread. If an egg is too large, you can lightly whisk the eggs with a splash of milk or cream in a bowl and pour them into the bread, adjusting the amount to fit.
  4. Season and Top: Season the eggs with salt and freshly ground black pepper. Sprinkle the shredded cheddar cheese evenly over the eggs, followed by the cooked crumbled bacon (or other meat).
  5. Bake: Carefully transfer the bread boat to the prepared baking sheet. Bake for 20-25 minutes, or until the egg whites are set and the yolks are cooked to your preference (less time for runnier yolks, more for firmer). The bread should be golden brown and crispy.
  6. Garnish and Serve: Remove the egg boat from the oven. Garnish generously with fresh chopped chives or green onions. Slice into individual portions and serve immediately.
