1 cup full-fat coconut milk
Juice of 1/2 lemon
Zest of 1/2 lemon
2 cloves garlic, minced
1 tablespoon olive oil
Salt to taste
Black pepper to taste
Fresh parsley, chopped (for garnish)
Instructions
Preheat your oven to 375°F (190°C).
In a mixing bowl, combine the coconut milk, fresh lemon juice, lemon zest, minced garlic, olive oil, salt, and black pepper. Whisk until thoroughly blended.
Arrange the cod fillets in a baking dish, then generously pour the prepared coconut lemon sauce over them.
Bake in the preheated oven for approximately 20-25 minutes, or until the cod is opaque throughout and flakes easily with a fork.
Before serving, sprinkle with fresh chopped parsley for a burst of color and herbaceous flavor.
