  • 2 tbsp olive oil or dairy-free butter
  • 1 large yellow onion, chopped
  • 2 cloves garlic, minced
  • 4 large russet potatoes, peeled and diced into 1-inch cubes
  • 4 cups vegetable broth
  • 1 (13.5 ounce) can full-fat coconut milk (or other unsweetened dairy-free milk like cashew or almond for a thinner soup)
  • 1 tsp dried thyme
  • 1/2 tsp dried rosemary, crushed
  • Salt and freshly ground black pepper to taste
  • Optional toppings: fresh chives, dairy-free sour cream, dairy-free bacon bits

Instructions

  1. Heat olive oil (or dairy-free butter) in a large pot or Dutch oven over medium heat. Add chopped onion and cook until softened, about 5-7 minutes.
  2. Add minced garlic and cook for another minute until fragrant.
  3. Add diced potatoes, vegetable broth, coconut milk, dried thyme, and crushed rosemary to the pot. Stir to combine.
  4. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until the potatoes are very tender when pierced with a fork.
  5. Once potatoes are tender, remove the pot from the heat. Use an immersion blender to blend the soup until it reaches your desired consistency (smooth or slightly chunky). If you don’t have an immersion blender, carefully transfer batches of the soup to a regular blender and blend until smooth, then return to the pot. Be cautious when blending hot liquids.
  6. Return the pot to low heat. Taste and season with salt and freshly ground black pepper as needed.
  7. Serve hot, garnished with fresh chives, dairy-free sour cream, or dairy-free bacon bits if desired.

Notes

  • For a thinner soup, you can use other unsweetened dairy-free milks like cashew or almond milk instead of full-fat coconut milk.
  • Be cautious when blending hot liquids in a regular blender; fill the blender only halfway and hold the lid down firmly.
  • Adjust seasoning to your preference.
