6–8 medium apples (such as Granny Smith, Honeycrisp, or Fuji), peeled, cored, and sliced
1/4 cup granulated sugar
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 tablespoon lemon juice
For the Topping:
1 cup rolled oats (old-fashioned)
1/2 cup all-purpose flour
1/2 cup packed light brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup (1 stick) cold unsalted butter, cut into small pieces
Instructions
Lightly grease the inside of your slow cooker crock.
In a large bowl, combine the sliced apples, granulated sugar, 1 teaspoon cinnamon, nutmeg, and lemon juice. Toss to coat evenly. Pour the apple mixture into the prepared slow cooker.
In a separate bowl, prepare the topping: combine rolled oats, flour, brown sugar, 1/2 teaspoon cinnamon, and salt. Cut in the cold butter pieces using your fingers, a pastry blender, or two knives until the mixture resembles coarse crumbs.
Sprinkle the oat topping evenly over the apples in the slow cooker.
Cover and cook on LOW for 3-4 hours or on HIGH for 2-3 hours, or until the apples are tender and the topping is soft and cooked through. (The topping will not get crispy in the slow cooker).
Serve warm, optionally with a scoop of vanilla ice cream or a drizzle of caramel sauce.
