4 boneless, skinless chicken breasts
1 tablespoon olive oil
1 onion, thinly sliced
4 cloves garlic, minced
1 cup sliced pepperoncini peppers
1 cup chicken broth
1 cup heavy cream
1/2 cup grated Parmesan cheese
1 tablespoon Italian seasoning
Salt and pepper to taste
Fresh parsley, chopped, for garnish
Instructions
In a large skillet, heat the olive oil over medium-high heat.
Season the chicken breasts generously with Italian seasoning, salt, and pepper.
Place the seasoned chicken in the hot skillet and sear for approximately 5 minutes per side, until they are beautifully golden brown.
Remove the chicken from the skillet and set it aside.
In the same skillet, add the thinly sliced onion and minced garlic. Sauté for about 3 minutes until the onions become tender and translucent.
Stir in the sliced pepperoncini peppers and continue to cook for another 2 minutes.
Pour the chicken broth into the skillet, making sure to scrape up any delicious browned bits from the bottom of the pan.
Stir in the heavy cream and Parmesan cheese, then bring the mixture to a gentle simmer.
Return the seared chicken breasts to the skillet. Allow them to simmer in the creamy sauce for about 10 minutes, or until the chicken is thoroughly cooked through and the sauce has noticeably thickened.
Garnish with fresh chopped parsley just before serving.
