  • 4 boneless, skinless chicken breasts

  • 1 cup sliced mushrooms (cremini or white button)
  • 1/2 small yellow onion, finely diced
  • 2 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Pat chicken breasts dry with paper towels. Season both sides generously with salt and pepper.
  2. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add chicken breasts and cook for 5-7 minutes per side, or until golden brown and cooked through. Remove chicken from the skillet and set aside on a plate, tented with foil.
  3. Add the remaining 1 tablespoon olive oil to the same skillet. Add sliced mushrooms and diced onion. Cook, stirring occasionally, until mushrooms are softened and browned, about 5-7 minutes.
  4. Add minced garlic to the skillet and cook for another minute until fragrant.
  5. Pour in the chicken broth, scraping up any browned bits from the bottom of the skillet. Bring to a simmer and cook for 2 minutes.
  6. Stir in the heavy cream and return to a gentle simmer. Cook for 3-5 minutes, stirring occasionally, until the sauce thickens slightly.
  7. Return the cooked chicken breasts to the skillet, spooning the creamy mushroom sauce over them. Heat through for 1-2 minutes.
  8. Garnish with fresh chopped parsley and serve immediately.
