2 pounds ground beef (80/20 or 85/15)
1 cup breadcrumbs (plain or Italian)
1/2 cup finely chopped yellow onion
1/2 cup milk
1 large egg, lightly beaten
2 cloves garlic, minced
1 tablespoon Worcestershire sauce
1 teaspoon salt
1/2 teaspoon black pepper
1 cup shredded sharp cheddar cheese, plus more for topping (optional)
For the Glaze:
1/2 cup ketchup
2 tablespoons brown sugar
1 tablespoon apple cider vinegar
Instructions
Preheat oven to 350°F (175°C). Lightly grease a loaf pan or a baking sheet.
In a large bowl, combine ground beef, breadcrumbs, chopped onion, milk, beaten egg, minced garlic, Worcestershire sauce, salt, and pepper. Mix gently until just combined (do not overmix, as this can make the meatloaf tough).
Gently fold in 1 cup of shredded cheddar cheese.
Form the meat mixture into a loaf shape and place it in the prepared loaf pan or directly onto a baking sheet. If using a baking sheet, shape it into a rectangular loaf.
Prepare the glaze: In a small bowl, whisk together ketchup, brown sugar, and apple cider vinegar.
Spread about half of the glaze evenly over the top of the meatloaf.
Bake for 1 hour to 1 hour and 15 minutes, or until the internal temperature reaches 160°F (71°C).
If desired, remove the meatloaf from the oven, spread the remaining glaze over the top, and sprinkle with additional shredded cheddar cheese. Return to the oven for another 5-10 minutes, or until the cheese is melted and bubbly.
Remove from oven and let the meatloaf rest for 10 minutes before slicing and serving. This helps the juices redistribute.
Notes
For a richer flavor, use 80/20 ground beef.
If you don’t have apple cider vinegar, regular white vinegar can be substituted in the glaze.
Letting the meatloaf rest before slicing is crucial for a moist result.
