4 boneless, skinless chicken breasts
1 tbsp olive oil
Salt and black pepper to taste
1 cup cherry tomatoes, halved
1/2 cup fresh mozzarella balls (bocconcini), halved or torn
1/4 cup fresh basil leaves, torn or chopped
2 tbsp balsamic glaze (store-bought or homemade)
Instructions
Preheat oven to 400°F (200°C).
Pat chicken breasts dry with paper towels. Season both sides with salt and pepper.
Heat olive oil in a large oven-safe skillet over medium-high heat. Sear chicken breasts for 3-4 minutes per side until golden brown.
Remove skillet from heat. Top each chicken breast with halved cherry tomatoes and fresh mozzarella.
Transfer the skillet to the preheated oven and bake for 10-15 minutes, or until the chicken is cooked through and the cheese is melted and bubbly (internal temperature 165°F/74°C).
Remove from oven. Sprinkle with fresh basil leaves.
Drizzle with balsamic glaze before serving.

Ensure chicken is cooked to an internal temperature of 165°F (74°C) for safety.
Adjust baking time based on the thickness of the chicken breasts.
For homemade balsamic glaze, simmer balsamic vinegar until it reduces and thickens.
