  • 1/2 cup plain breadcrumbs
  • 1 large egg, lightly beaten
  • 1/4 cup finely chopped celery
  • 2 tablespoons finely chopped red onion or scallions
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup buffalo hot sauce (plus more for tossing)
  • 2 tablespoons unsalted butter, melted
  • Optional for serving: blue cheese dressing or ranch dressing, celery sticks

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine ground chicken, breadcrumbs, egg, chopped celery, chopped red onion, garlic powder, salt, and pepper. Mix gently until just combined (do not overmix).
  3. Form the mixture into 1-inch meatballs (about 20-24 meatballs) and place them on the prepared baking sheet.
  4. Bake for 18-22 minutes, or until cooked through and lightly browned (internal temperature should reach 165°F/74°C).
  5. While meatballs are baking, in a small microwave-safe bowl, combine 1/2 cup buffalo hot sauce and melted butter. Whisk until smooth.
  6. Once meatballs are cooked, transfer them to a large bowl. Pour the buffalo sauce mixture over the meatballs and toss gently to coat evenly.
  7. Serve hot with blue cheese or ranch dressing and celery sticks if desired.
