Instructions
Preheat oven to 375°F (190°C).
Pat pork chops dry with paper towels. This helps them get a better sear.
In a small bowl, combine paprika, garlic powder, onion powder, salt, and pepper.
Rub olive oil all over the pork chops, then sprinkle generously with the seasoning mixture on both sides.
Heat an oven-safe skillet (cast iron works best) over medium-high heat. Once hot, sear the pork chops for 2-3 minutes per side until nicely browned.
If using, pour chicken broth into the skillet around the chops. This will add moisture and flavor.
Transfer the skillet to the preheated oven. Bake for 8-15 minutes, or until the internal temperature reaches 145°F (63°C) when measured with a meat thermometer.
Remove from oven, transfer chops to a plate, and tent loosely with foil. Let them rest for 5 minutes before serving. This allows the juices to redistribute, keeping the chops tender and moist.
