A quick and easy 5-ingredient white chicken chili recipe that’s perfect for a weeknight meal. This flavorful chili is packed with tender chicken, beans, and a hint of spice.

  • 1 tbsp olive oil
  • 1 lb boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 large onion, chopped
  • 2 cans (15 oz each) great northern beans, rinsed and drained
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 can (4 oz) chopped green chilies, undrained
  • 4 cups chicken broth
  • 1 tbsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • Optional garnishes: shredded cheese, sour cream, chopped cilantro, tortilla chips

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add chicken cubes and cook until lightly browned on all sides, about 5-7 minutes. Remove chicken from pot and set aside.
  2. Add chopped onion to the pot and cook until softened, about 5 minutes.
  3. Return chicken to the pot. Stir in rinsed and drained great northern beans, undrained diced tomatoes, undrained chopped green chilies, chicken broth, chili powder, and cumin.
  4. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for at least 20-30 minutes to allow flavors to meld. If you prefer a thicker chili, you can mash some of the beans against the side of the pot.
  5. Season with salt and pepper to taste.
  6. Ladle into bowls and serve hot with desired garnishes.

Notes

  • For a spicier chili, add a pinch of cayenne pepper or a diced jalapeño with the onions.
  • If you don’t have great northern beans, cannellini beans or navy beans can be substituted.
  • This chili freezes well. Let it cool completely before storing in an airtight container in the freezer for up to 3 months.
